Eating Outdoors This Summer!
Light evenings and warm temperatures make summer the ideal season for dining outside, whether this is in your garden, patio area or local park. Alfresco dining doesn’t need to mean a BBQ either, at our Longstock Café you can enjoy a light bite to eat from locally sourced produce and our own Leckford Estate ingredients.
Here are our top outdoor dining choices for you to enjoy this summer.
Get creative with your salads
Often, people think of salads as a dull addition to a main meal, however this doesn’t need to be the case! Build a salad in layers and add punchy flavours such as chilli, lemon or radishes. Try this delicious Radish and Cucumber Salad by Waitrose which uses fresh ingredients and bold flavours to create a great summer salad. Try swapping the olive oil for rapeseed oil to boost your health points and support local farmers.
At Leckford Estate, we produce 500 tonnes of cold-pressed rapeseed oil annually, a naturally vibrant yellow oil which is rich in Omega 3, 6 and 9. Our rapeseed oil is high in vitamin E and a healthy alternative to olive oil, with a subtly, nutty taste. Use it as a dressing for salads, as a dipping oil for antipasti or to cook with. The Leckford Estate rapeseed oil is available from our Farm Shop and selected Waitrose stores or online. Find out more about how our rapeseed oil is produced.
Try a plant-based meal
Plant-based eating is not a new thing, but in recent years it’s become increasingly popular, not only due to the health benefits, but also because consumers are becoming more aware of where their food comes from and are seeking local, fresh produce.
Risotto is a great, filling meal which is incredibly versatile for all the family to enjoy. It is also a great dish to serve when entertaining as it can easily be made in large quantities. Start with a basic risotto recipe, using rapeseed oil instead of butter and vegetable stock to replace chicken stock. You can then add vegetables such as mushrooms for flavour and valuable nutrients. At Leckford Estate we grow 5 types of chestnut mushrooms which are grown and harvested by our Partners to the highest standards. Want to try our delicious, fresh mushrooms? They’re available to buy from the Leckford Estate Farm Shop! Serve with our sensational sparkling wine which is grown on our estate in Hampshire and has won extensive awards such as the Independent’s Indy/Best Buy sparkling wine for summer!
