Get Creative with Your Salads
Often, people think of salads as a dull addition to a main meal, however this doesn’t need to be the case. Build a salad in layers and add punchy flavours such as chilli, lemon or radishes. Try this delicious Radish and Cucumber Salad by Waitrose which uses fresh ingredients and bold flavours to create a great summer salad. The versatility of flavours become far from boring and voila, your salad becomes a crowd pleasing and filling main. You can also try swapping out olive oil for rapeseed oil to boost your health points while support local farmers in the process.
At Leckford Estate, we produce 500 tonnes of cold-pressed rapeseed oil annually, a naturally vibrant yellow oil which is rich in Omega 3, 6 and 9. Our rapeseed oil is high in vitamin E and a healthy alternative to olive oil, with a subtly, nutty taste. Use it as a dressing for salads, as a dipping oil for antipasti or to cook with. Try a Plant-Based Meal
Plant-based eating is not something new, but in recent years it’s become increasingly popular, not only due to the health benefits, but also because consumers are becoming more aware of where their food comes from and are seeking local, fresh produce.
Risotto is a great option here, a filling meal which is incredibly versatile for all the family to enjoy. It is also a great dish to serve when entertaining as it can easily be made in large quantities. Start with a basic risotto recipe, using rapeseed oil instead of butter and vegetable stock to replace chicken stock. You can then add vegetables such as mushrooms for flavour and valuable nutrients. Serve with our sensational English sparkling wine which is grown on our estate in Hampshire, and has won extensive awards such as the Independent’s Indy/Best Buy sparkling wine for summer!
