Summer Produce

(June, July, August)

Anyone who has a passion for cooking and food will know the importance of seasonal produce. Summer offers some of the finest and lightest produce to complement warmer days. The key to deliciously refreshing summer recipes is to select the right ingredients and let them compose the meal for you. 

One ingredient that is harvested during the summer is Rapeseed, used for the popular Leckford Estate Cold Pressed Rapeseed Oil. The crop is harvested from the Waitrose & Partners Farm, then pressed, bottled and labelled on the Farm  and then off to the Waitrose & Partners  stores and the Leckford Farm Shop.  Our Coldpressed Rapeseed Oil is high in vitamin E and is a healthy alternative to olive oil and can be used for cooking, salad dressings and even in a beauty regime!

Mushrooms grow all year round, as they grow in temperature-controlled rooms with our team of Partners looking after them.  We grow five types of mushrooms at The Waitrose & Partners Farm, each harvested at different times to provide different varieties of mushroom and to ensure optimal taste and texture. 

In the summer, mushrooms can be used to make a delicious Warm Mushroom and Kale Salad or The Happy Pear's Vegan Oyster Mushroom Sliders with Sundried Tomato Pesto and Coleslaw.

Using our summer Leckford ingredients, why not make a Summer Risotto, adding both Leckford Rapeseed Oil and Leckford Mushrooms, plus any other seasonal vegetables that you enjoy!
