For anyone who enjoys food and cooking, it is important to get the right produce for each season. Summer can offer the finest, lightest produce to complement warmer days. The key is to get the ingredients right and let the seasonal fruit and vegetables pick your food of choice for you.
One ingredient that is harvested around Summer and is widely used is Rapeseed oil. The Leckford Estate rapeseed crop is harvested from The Waitrose Farm in July. It is then pressed, bottled and labelled and travels to Waitrose stores and the farm shop. Rapeseed Oil is high in Vitamin E and is a healthy alternative to Olive Oil, used best for cooking, a salad dressing or even as a moisturiser.
Mushrooms grow all year round, as they grow in temperature controlled rooms with our team of partners looking after them. We grow 5 types of mushrooms at The Waitrose Farm, each harvested at different times to provide different varieties of mushrooms. In the summer season they are a lovely addition to any salad or summer burger.
